Ingredients
- Nonstick vegetable oil spray
- 3/4 cup ketchup
- 1/4 cup mild-flavored (light) molasses plus
- 1 tablespoon mild-flavored (light) molasses
- 1/4 cup bourbon
- 2 tablespoons Dijon mustard
- 1 large garlic clove minced
- 6 pork loin chops, 1" thick - (8 oz ea)
- Salt to taste
- Freshly-ground black pepper to taste
- Spiced Onion Marmalade (see recipe)

Preparation
Step 1
Preheat oven to 400 degrees. Spray baking sheet with vegetable oil spray.
Whisk next 5 ingredients in small bowl to blend. Sprinkle pork chops with salt and pepper. Brush generous 1 tablespoon glaze on each side of pork chops. Place chops on prepared baking sheet. Bake until thermometer inserted into center registers 150 degrees, about 20 minutes.
Serve with warm Spiced Onion Marmalade.
This recipe yields 6 servings.
At the restaurant, this dish is sprinkled with candied pecans before serving.
