Richard Coffeen's Colonial Diary Recipe Cheesecake

Ingredients

  • Crust:
  • 2 c. cottage cheese, pressed through colander
  • 1/4 pt. whipped cream
  • 1 c. sugar
  • 3 eggs
  • 2 T. flour
  • Lemon or vanilla
  • 1 box Zwieback bread
  • 1/2 c. butter, melted
  • 3/4 c. sugar
  • 1 tsp. cinnamon

Preparation

Step 1

Beat the sugar, cottage cheese and flour until smooth. Add whipped cream and lemon/vanilla. Mix Zwieback bread, melted butter, 3/4 cup sugar and 1 teaspoon cinnamon. Line a pie tin with crust. Fill crust with cream cheese mixture and bake in a slow 350 degree oven until firm.
