Ingredients
- 2 med tomatoes cut into wedges
- 1/2 large red onion cut into wedges
- 1/4 C olive oil
- 1/4 t salt
- 1/2 C cilantro leaves
- 1 to 2 t chipotle pepper in adobo sauce
Preparation
Step 1
Preheat over to 450. Place tomatoes, onions in foil lined pan. Toss with 1 T oil, salt. Roast 20 to 30 min until browned. Cool slightly. In food processor place vegies and cilantro until smooth. gradually adding remaining oil with motor running. add chipotle to taste
