Pound Cake

Ingredients

  • Preheat oven to 325 degrees and grease and flour bundt pan
  • 1 cup butter
  • 3 eggs
  • 2 cups sugar
  • 2 1/4 cups flour
  • 1/2 tsp. salt
  • 1/2 tsp. Baking soda
  • 1 tsp lemon Peel (optional)
  • 1 tsp vanilla
  • 1 cup yogurt or sour cream*

Preparation

Step 1

Butter should be soft enough to easily combine in sugar and eggs. After well combined, add flour, salt, soda, lemon peel and vanilla. Then add last ingredient*. Beat with a blender, 3 minutes at low speed. Pour into pan and bake at 325 degrees for 60-70 minutes. Let cool for 15 minutes.
*(note on last ingredient-as a substitute you can use 1 cup of milk with some fresh lemon juice squeezed in. Yes, the milk will curdle a little! This actually makes the pound cake a little lighter than sour cream or yoghurt!)
