Curry Cauliflower and Potatoe Soup

  • 1 qt. chicken broth
  • 1 small chopped onion
  • 2 tbl minced garlic
  • 1 tsp olive oil
  • 1 tsp ginger, powder
  • 1 tsp curry, powder
  • 1 tsp, cumin, ground
  • 1/2 medium head cauliflower, roughly chopped
  • 1 celery stalk and leaves, chopped
  • 1/2 poblano pepper, diced
  • 1 potatoe, peeled and chopped into bite sized pieces
  • 2 carrots, peeled and diced
  • salt and pepper to taste
  • cilatro, fresh choppped added as garnish



Step 1

Add all ingridients (except cilatro) to crock pot. Cook on high for 2 hrs. Reduce to low and cook for 3 hours. Puree in food processor. Serve with cilatro topped.
