Hot German Potatoe Salad with bacon and scallions

Ingredients

  • 1 lb small red potatoes roughly chopped
  • 4 strips turkey bacon diced
  • 1 Tbsp all purpose flour
  • 1/2 cup cider vinegar
  • 2 Tbsp light brown sugar
  • 1/4 c chopped scallions

Preparation

Step 1

Boil potatoes in a pot of salted water until tender, 15-20 minutes.

Cook bacon in oil in a sucepan until crispy. Remove cooked bacon to a paper towel to drain, leaving oil in the pan. Add onion to pan; saute until softened. Add flour, stire until paste-like. Stir in vinegar and brown sugar. When mixture is thick, return bacon to skillet, simmer mixture for 1-2 minutes.

Drain potatoes. Addto pan with bacon mixture; stir gently until potatoes are coated. Transfer potato salad to a serving bowl; sprinkle with scallions. Serve potato salad warm.
