Grandma Cookie's Carrot Cake

- 2 c flour
- 2 c sugar
- 2 t baking soda
- 2 t baking powder
- 2 t cinnamon
- 1/2 t salt
- 3/4 c oil
- 3/4 c applesauce
- 4 eggs
- 3-4 c carrots, shredded
- 1 t vanilla
- Frosting
- 1/2 c butter room temp
- 8 oz cream cheese room temp
- 1 pinch salt
- 1 t vanilla
- 1 lb powdered sugar
- 1 c nuts optional

Step 1
Preheat oven to 350. Sift the flour, sugar, baking soda and powder, cinnamon, and salt into a mixing bowl.
Add the oil, applesauce, and eggs. mix until incorporated. Fold in the grated carrots.
Grease 2 9 or 10 in pans. Could be a 9x13 as well. Cut out parchment paper to cover the bottom of the pan and then grease again. Sprinkle a little flour in the pan and shake pan to cover with flour. Divide the batter between the two pans.
Bake for approx 35 min when using 2 round pans but additional time might be needed for 9x13. Check your cake at 30 min and every 5 min after that and use a toothpick to check doneness.
To make the frosting, blend cream cheese with butter until smooth. Blend in vanilla, salt, and powdered sugar. Fold in nuts if using. Wait until the cake is completely cool before frosting.
