BANANA UPSIDE DOWN CAKE

Ingredients

  • for caramelized bananas: 1/2c butter, 3/4c brown sugar, 1tsp. cinnamon, 1T Kahlua or other rum, 2 medium bananas sliced
  • for cake: 3/4c softened butter, 1 8oz. pkg. softened cream cheese, 2c white sugar, 3 ripe bananas mashed, 2 eggs, 1tsp. vanilla extract, 3c flour, 1/2tsp. each baking powder, and baking soda, 1 1/2tsp. cinnamon
  • for rum soak: 1/4c butter, 2T water, 1/2c sugar, 1/4c Kahlua or rum

Preparation

Step 1

. melt butter, add brown sugar and cinnamon, bring to a boil over medium heat, turn off the heat and stir in the rum

. prepare a spring form pan by greasing the bottom, fan out banana slices and pour caramel over the bananas

. combine all the dry ingredients, except sugar

. combine all the wet ingredients, except butter and cream cheese

. cream together the white sugar, cream cheese and 3/4c butter

. mix together the wet and dry ingredients in thirds into the creamed sugar, butter, cheese mixture

. pour evenly into the spring form pan do not fill all the way just 3/4ths. bake at 350 degrees until done in the center

. remove from oven and poke holes in the cake and brush or pour part of the rum mixture over the top, let cool for 10 minutes, remove ring and invert onto a cake plate, poke hole into the cake and spread the rum soak all over it, let cool completely before serving
