Dutch Indies Quesadillas

Fruity and smoky, fresh and flavorful, theses are traditional looking quesadillas with a twist! A combo of fresh papaya from the islands and a smoky Dutch Gouda are the tasty surprise.

Ingredients

  • 1 large jalapeño
  • 1 small red pepper
  • 1/2 large red onion
  • 1 tbsp oil
  • 1/4 cup fresh cilantro
  • 8 oz smoked Gouda
  • 1/2 large ripe papaya
  • 8 (8 inch) honey wheat flour tortillas
  • 1/4 cup sour cream

Preparation

Step 1

1. Preheat oven to 425ºF. Seed and mince jalapeno. Mince red pepper and onion. In medium skillet over high, heat oil. Add all vegeta¬bles and cook, stirring, until soft, about 3 minutes. Meanwhile, chop cilantro. Add cilantro to skillet. Remove from heat and set aside.

2. Shred cheese. Seed, peel and thinly slice papaya.

3. Arrange 4 tortillas on 2 baking sheets. Top each tor¬tilla with cheese, papaya, then vegetable mixture, reserving 1/4 cup of vegetable mixture for garnish. Top with remain¬ing tortillas. Bake until cheese is melted, about 6 minutes.

4. Cut each into 6 wedges. To serve, spoon 1/2 tsp sour cream onto each wedge and top with a garnish of veg¬etable mixture.
