Lemon Bars

Ingredients

  • 2 C flour
  • 1/2 C powdered sugar
  • 1 C butter
  • 4 eggs
  • 1 1/2 C granulated sugar
  • 1/2 C lemon juice
  • 1/3 C flour
  • 1/2 t baking powder

Preparation

Step 1

Preheat oven to 350°

CRUST:
Blend together flour and sugar. Cut in butter. Press into 13"x9"x2" pan. Bake at 350° for 20 minutes.

TOPPING:
Beat eggs. Add sugar and lemon juice (can use as little as 1/3 juice to lessen the tartness). To egg mixture, add flour blended with the baking powder. Mix well. Pour over baked crust and bake 25 minutes longer. Let cool 1 hour. Sprinkle with powdered sugar. Cut into bars.
