Smoked Sausage & Hashbrown Casserole in a Slow Cooker

Try this easy supper recipe for any weeknight dinner. Sausage, hashbrowns, onions and cheese are slow cooked with a homemade cream of chicken soup to make this yummy casserole.

Ingredients

  • HOMEMADE CREAM OF CHICKEN SOUP:
  • 1 tablespoon 1 tablespoon butter
  • 2 tablespoons 2 tablespoons flour
  • 1 cup 1 cup water
  • 1 cup 1 cup milk
  • 2 teaspoon 2 teaspoon chicken bouillon paste
  • 1/2 teaspoon 1/2 teaspoon thyme
  • 1/2 teaspoon 1/2 teaspoon poultry seasoning
  • Salt and pepper, to taste
  • CASSEROLE:
  • 1 (32-ounce) bag 1 (32-ounce) bag hashbrowns, thawed
  • 14 ounces 14 ounces smoked sausage, diced
  • 1 small 1 small onion, diced
  • 1 1/2 cup 1 1/2 cup cheddar cheese, shredded

Step 1

HOMEMADE CREAM OF CHICKEN SOUP
Melt butter in small saucepan over low heat. Sprinkle in flour and whisk. Cook 1 minute, then stir in water and whisk to remove any lumps. Simmer until thick. Stir in milk and chicken bouillon paste plus seasonings. Sauce should thicken slightly. Adjust seasonings to taste. Set aside.

CASSEROLE
Place hashbrowns, sausage, onion, and cheese in slightly greased crockpot. Pour soup over the top and stir. Cover and cook on high for 3 hours or until potatoes are soft.
