Toasted Almond Pilaf

Ingredients

  • 2 tbsp margarine or butter
  • 1 cup long-grain white rice
  • 1 cup (3oz)sliced fresh mushrooms
  • 1/2 cup chopped onion
  • 1 3/4 cups (14.5 oz. can) chicken broth
  • 1/4 cup water
  • 1/4 cup slivered almonds, toasted
  • Chopped fresh basil (optional)

Preparation

Step 1

Melt margarine in large saucepan over medium-high heat. Add rice, mushrooms, and onion; cook, stirring constantly for 4-5 minutes or until rice is light golden brown. Stir in broth and water. Bring to boil. Reduce heat to low; cover.

Cook for 20-25 minutes or until rice is tender. Sprinkle with almonds and basil.
