Scallop Scampi

Ingredients

  • 1 tbs unsalted butter
  • 1 lb scallops
  • 1/4 c olive oil
  • 1/4 c freshly squeezed juice
  • 4 garlic cloves, finely chopped
  • 1/2 tbs finely chopped chives
  • 1/4 tsp each of salt and pepper

Preparation

Step 1

Heat the butter in a sauté pan, preferably cast iron. Pat the scallops dry with a paper towel.

Places scallops on one side after the butter melts. Leave them to brown, approximately 5 minutes. Don't interfere with the scallops, leave them alone to brown.

Remove from pan and place in a shallow bowl for serving.

Remove any scallop charred remnants from the pan.

Add remaining ingredients in the same pan and sauté for 1 minutes until garlic turns gold. Pour over the scallops and serve immediately
