Jennifer's Blueberry Bread

Ingredients
- 3 cups flour (hold 1/4 cup to the side)
- 1 tsp salt
- 1 tsp baking soda
- 1 1/2 tbsp ground cinnamon
- 2 cups sugar
- 3 well beaten eggs
- 1 1/4 cups salad oil
- 2 pints blueberries
- 2 lightly greased 8X4 inch loaf pans

Preparation
Step 1
Preheat oven to 350 degrees
Sift all dry ingredients together in a bowl and set aside
3 cups flour (put 1/4 cup aside to coat the blueberries)
1 tsp salt
1 tsp soda
1 tbsp ground cinnamon
2 cups sugar
Add to an electric mixer bowl the 3 eggs and 1 1/4 cups salad oil and beat until eggs have been incorporated well.
Add the sifted dry ingredients into the mixer bowl 1/2 cup at a time, waiting bettween additions until dry ingredints are somewhat moist. Stop Mixer.
Add the 1/4 flour to the blueberries in a separate bowl and lightly coat by gently stirring by hand.
Add the coated 2 pints of blueberries into the batter mix and gently sir by hand until incorporated. The batter will be thick so busting a couple of blueberries is fine.
Spoon batter into 2 lightly greased 8X4 inch loaf pans
Bake for 1 hour or until toothpick comes out clean
Let stand overnight before slicing
