broccoli salad with raspberry vinaigrette

Ingredients

  • 6 cups fresh broccoli florets
  • 1/2 cup total of raisin and dried cranberries
  • 1/3 cup roasted pumpkin seeds
  • 1/4 cup sliced almonds
  • 4 slices bacon, cooked to a desired crisp and crumbled
  • 1/2 small red onion, diced
  • 1 teaspoon honey
  • 2 tablespoons raspberry balsamic vinegar
  • 6 tablespoons STAR Extra Virgin Olive Oil
  • salt and fresh ground pepper, to taste

Preparation

Step 1


In a bowl combine broccoli, dried fruit, pumpkin seeds, almonds, bacon, and onion; set aside.



Whisk the remaining ingredients in a small bowl until completely incorporated.
Add salt and pepper; continue to whisk until well combined.

Pour dressing over broccoli mixture; toss to combine.
Cover and chill until ready to serve.

Stir before serving.
