dill cream sauce for salmon

John's favorite from Russels steaks in Buffalo

Ingredients

  • 2 cups of champagne
  • 2 tbs. of minced shallot
  • 1 tbs. of minced garlic
  • 2 tsp. of kosher salt
  • 1 tsp. of pepper
  • 2 cups of heavy cream
  • 1 bag of fresh dill

Preparation

Step 1

Let champagne reduce to about 1/4 cup and then add the cream, shallots and garlic. Allow to come to a boil. When boiling add the dill. Thicken and season with salt and pepper.
