Chocolate Chip Muffins

Ingredients

  • Chocolate Ganache:
  • 2 c flour
  • 1/2 c sugar
  • 1/2 c semisweet chocolate chips
  • 1/2 c sweet choc chips
  • 2 eggs, lightly beaten
  • 1 c milk
  • 1/3 c butter, melted
  • 1 tsp vanilla extract
  • 3 oz semisweet chocolate, chopped
  • 1/4 c heavy cream
  • 1 1/2 T butter

Preparation

Step 1

Preheat oven to 200°. Grease 6 large (1 c) muffin cups or line them with baking paper cases.

In a large mixing bowl, sift the flour. Stir through the sugar, then add the choc chips. Make a well in the center.

In a small mixing bowl, combine the eggs, milk, butter, and vanilla extract. Add all at once to the flour mixture and stir until just moistened (the batter should be lumpy).

Spoon batter into prepped muffin cups, filling them 2/3 full. Bake until golden brown and wooden skewer or toothpick inserted into the center of a muffin comes out clean, 25-30 min.

Remove from oven and cool in pans for 5 min. Serve warm or transfer to a wire rack to cool.

For ganache, place the chocolate, cream, and butter in a heatproof bowl over (not touching) a pan of simmering water. Stir gently over low heat until melted and smooth. Chill until firm, then pipe or spread ganache over the cooled muffins.
