MEXICAN PORK AND GREEN CHILI STEW

Ingredients

  • 2 T oil
  • 1 c flour
  • 2 1/2 lbs. boneless pork cut into 1 inch cubes
  • 1 1/2 c onion diced
  • 1 clove garlic
  • 1 can diced tomatoes
  • 1 4oz. can diced green chilies
  • 2 T minced fresh cilantro
  • 1/4 c cold water
  • 1 T cornstarch
  • 1 c shredded Mexican cheese blend
  • 2 T chopped cilantro

Preparation

Step 1

. season and dredge pork in flour, heat oil and brown the pork

. stir in the onion and garlic with pork and continue cooking until onions are soft, add in cilantro

. stir stewed tomatoes and chilies

. cover and simmer until pork is tender

. make a slurry with the cornstarch and the cold water, stir into the pot and bring to a boil 5-10 minutes to thicken, taste and adjust seasoning

. serve with sour cream, cilantro and lime wedges
