Ingredients
- 2 T oil
- 1 c flour
- 2 1/2 lbs. boneless pork cut into 1 inch cubes
- 1 1/2 c onion diced
- 1 clove garlic
- 1 can diced tomatoes
- 1 4oz. can diced green chilies
- 2 T minced fresh cilantro
- 1/4 c cold water
- 1 T cornstarch
- 1 c shredded Mexican cheese blend
- 2 T chopped cilantro

Preparation
Step 1
. season and dredge pork in flour, heat oil and brown the pork
. stir in the onion and garlic with pork and continue cooking until onions are soft, add in cilantro
. stir stewed tomatoes and chilies
. cover and simmer until pork is tender
. make a slurry with the cornstarch and the cold water, stir into the pot and bring to a boil 5-10 minutes to thicken, taste and adjust seasoning
. serve with sour cream, cilantro and lime wedges
