Corned Beef Brisket - Slow Cooker - with Horseradish Sour Cream

Even if it's not St. Patrick's Day, cook up this traditional Irish dinner of corned beef brisket. Your slow cooker makes it simple. Serve with boiled small red potatoes and steamed green cabbage.

Ingredients
- 1 Large sweet onion (Bermuda, Maui, or Spanish), sliced
- 3 - 3 1/2 lb. well-trimmed corned beef brisket
- 3/4 teaspoon crushed red pepper
- 1 cup reduced sodium check broth
- 1 tablespoon Worcestershire sauce
- 1/2 cup sour cream
- 1 tablespoon cream-style horseradish
- 2 tablespoons chopped fresh parsley

Step 1
In 5 - 6 quart slow cooker, place onion. Remove beef from package; discard liquid and seasoning packet. Thoroughly rinse beef. Place beef on onions; sprinkle with red pepper. In small bowl, mix both and Worcestershire sauce; pour over beef.
Cover and cook on Low heat setting 8 - 9 hours.
In small bowl, stir sour cream, horseradish and parsley until well mixed. Serve with beef and onion.
