Ingredients

  • 1

    Large sweet onion (Bermuda, Maui, or Spanish), sliced

  • 3 - 3 1/2

    lb. well-trimmed corned beef brisket

  • 3/4

    teaspoon crushed red pepper

  • 1

    cup reduced sodium check broth

  • 1

    tablespoon Worcestershire sauce

  • 1/2

    cup sour cream

  • 1

    tablespoon cream-style horseradish

  • 2

    tablespoons chopped fresh parsley

Directions

In 5 - 6 quart slow cooker, place onion. Remove beef from package; discard liquid and seasoning packet. Thoroughly rinse beef. Place beef on onions; sprinkle with red pepper. In small bowl, mix both and Worcestershire sauce; pour over beef. Cover and cook on Low heat setting 8 - 9 hours. In small bowl, stir sour cream, horseradish and parsley until well mixed. Serve with beef and onion.
