Ingredients
- Filling:
- Bleitlach (Crepes)
- 2 1/2 c water
- 2 c milk
- 5 eggs
- 3 1/2 c flour
- 1 T oil
- 1/4 tsp salt
- 3 lbs farmer cheese
- 6 T flour
- 6 T sugar
- 1 c raisins (optional)
- 3-4 eggs
- 1/8 tsp salt
- 2 T vanilla
- 1 tsp lemon juice
Preparation
Step 1
Mix with egg beater. Use pastry brush to oil frying pan before each blintz.
Pour small amount of batter into pan. Pour off excess. Fry lightly and overturn onto large plate or wax paper. Helpful hint- add a few bread crumbs or matzo meal between layers to prevent sticking.
Put heaping Tblsp of filling onto fried side of bleitlach. Fold 2 ends and roll. Fry finished blintz.
