Low Fat Cheesecake (Gila Arnold )

Ingredients

  • Crust:
  • 1 Graham cracker Crust or
  • 1 pkg of regular graham crackers
  • Oil
  • Blend:
  • 8 oz cream cheese
  • 16 oz farmer cheese
  • 4 eggs, separated
  • 1/2 c sugar
  • 1 T lemon juice
  • 1 t vanilla

Preparation

Step 1

If making own crust, crumble crackers in food processor and mix with oil until it sticks. You can substitute margarine and it will stick better. Place in 9x13 pan or 2 round 9in crusts. Bake at 350 for 15 min

Whip egg whites until stiff. In separate bowl, mix yolks, cheese, sugar, lemon juice, and vanilla. Fold in egg whites.

Bake at 325° for 1 hr.
