Ingredients
- Crust:
- 20 graham crackers
- 1/2 c sugar
- 1/8 tsp salt
- 1 tsp cinnamon
- 1 stick soft butter/margarine
- Filling:
- 2 eggs
- 2 c cottage cheese
- 2 T vanilla
- 2/3 c sugar
- 1/4 t salt
- 3 T flour
- 1 small can crushed pineapple (optional)
Preparation
Step 1
Using blender, break half of the crackers. Blend to fine crumbs, approx 2 min. Repeat with remaining crackers. Add sugar, salt and cinnamon. Pour into mixing bowl. Add butter and knead with fingers as for a pie crust. Press into greased 10 in pie sheet or 9x13 in pan. Refrigerate.
Pour filling ingredients into blender- in order listed. Cover and blend until well mixed, 1-2 min. Scrape down sides.
Drain crushed pineapple. Put on top of crust. Pour filling over it. Sprinkle with sugar and cinnamon. Bake at 350° (slowly) for about an hour or until firm.
