Chicken (Roasted with Apple Slaw)

  • 6 chicken legs bone in skin on
  • salt and pepper
  • juice of one lime
  • 1/2 tsp ground allspice or mix 1/2 tsp cinnamon with 1/4 tsp of nutmeg and 1/4 tsp of ground cloves
  • 2 Tbsp hot Asian chili sauce
  • 4 Tbsp honey
  • 1/3 cup mayonnaise
  • 1 Granny smith apple
  • 4 Cups shredded coleslaw mix
  • 3 scallions
  • salt and pepper

Preparation

Step 1

1. Preheat oven to 450 degrees and line a rimmed baking sheet with aluminum foil or use a roasting pan.Pat the chicken dry and sprinkle with sea salt and pepper.
2. Place skin side up on the prepared baking sheet and roast until the skin begins to turn golden, about 25 minutes.
3. Meanwhile, make the glaze. Mix the juice of one lime with the allspice and 2 Tbsp of hot chili sauce and 4 Tbsp honey set aside.
4. Make the slaw. Whisk the juice of the one lime and one Tbsp of hot sauce and one Tbsp honey, and the mayonnaise in a medium bowl.
Cut the apple into matchsticks and add to the mayonnaise misture along with coleslaw mix and scallions.Toss to coat. Season with salt.
5. Remove the chicken from the oven and brush with the glaze. Return to the oven and continue roasting until the skin is golden brown and crisp and the thermomether inserted registers 165 dgrees, 10 more minutes.
Serve with slaw.
