Ingredients
- Gravy: Gordon Ramsay
- 25 g butter
- turkey giblets ( neck,heart,& liver rinsed )
- 3 celery sticks roughly chopped
- 2 carrots roughly chopped
- 1 onion roughly chopped
- 3 fresh bay leaves
- 8 black peppercorns
- 3 tbs flour
- 1.5 litres water
- 150 ml dry white wine
Preparation
Step 1
melt butter in large pan over med heat:
add giblets and vegetables, fry for 8 mins till golden:
add bay leaves and peppercorns and 1.5 litres water:
bring to boil: simmer 1 hour:
strain into jug should be appx 600 mls:
place turkey roasting tin on stove on med heat: add flour, stir 1 min: grad stir in wine: stir x 1 min: grad stir in wine:
bring to boil reduce by half.
Add stock and any of turkey juices, bring back to boil:
reduce to simmer: x 15 mins to thicken discard any scum fro the surface:
season keep hot strain to serve.
