- 5 large eggs
- 1 tomato sliced
- 1 1/2 cup Finely sliced cabbage
- 1/2 cup Mayo
- 1 tbsp Crushed pepper (chili flakes)
- 1/2 tsp Crushed thyme
- 1/4 cup Mango pulp
- Salt to season
- Dill for garnish (optional)

Making croissants from scratch requires some amount of elbow grease. I have attempted to make them and they turned out very well. You can find the recipe
Whether you make a small batch or a large one, the effort required to make good croissants is almost the same. So, unless you are making huge batches of croissants, the effort seems a tad unjustified. However, if you have a mom-n-pop shop close by that bakes fresh croissants everyday, you should totally grab a few.
Breakfast, lunch or dinner, you can never go wrong with a croissant sandwich. Add to the mix, an egg salad that is tossed in a mango mayonnaise and you will understand the enthusiasm behind my paragraphs of appreciation for something as simple as a croissant sandwich!
Serves:
Directions
Boil the eggs, peel and dice them to small bite sized pieces.
Mix all the ingredients for the mango mayo with the diced egg.
Cut the croissants into halves.
Now place a generous helping of the egg salad onto the tomatoes.
Cover the sandwich and enjoy the ride!
My Take:
If you happen to have fresh mangoes on hand, you can also add a few chunks into the egg salad.
