Ingredients
- 2 Cups Eggplant, peeled, cubed
- 1/2 Cup Water
- 1/2 Cup Coarse Graham Cracker Crumbs
- 4 Tbs. Minced Onion
- 3 oz. Cheddar Cheese, shredded
- 1 Egg Beaten
- 1/2 Cup Milk
- 2 Tbs. Butter

Preparation
Step 1
In a saucepan cook eggplant with water about 8 minutes or until tender. Drain. In a greased casserole dish layer 1 cup cooked eggplant, 1/4 cup graham cracker crumbs, 2 Tbs. onion, and 1 1/2 oz. cheese. Repeat with remaining eggplant, onion, and cheese. In a bowl combine egg and milk. Pour over layered ingredients. Dot with butter. Sprinkle with remaining cracker crumbs. Bake at 350 degrees for 30 minutes.
