Ingredients

  • 1 pk (11oz) mixed dried fruit
  • 1 chuck brisket or shoulder roast (about 3lbs)
  • 1 tbsp all purpose flour
  • 2 tsp salt
  • 1/4 tsp pepper
  • 4 carrots pared and quartered
  • 4 sweet potatoes or yams
  • 1/2 lemon thinly sliced
  • 1/2 lime
  • 2 c water
  • 1 c orange juice
  • 4 tbsp honey

Preparation

Step 1

Rinse dried fruit and soak in cold water 1 hr and drain

Sprinkle meat with flour, salt and pepper brown over med heat. Arrange fruit, carrots, potatoes, lemon and lime slices around it. Mix water, orange juice and honey in med bowl. Pour over all cover and bake 350 2 hrs 30 min
