Ingredients

  • 1 c sliced carrots
  • 1 c diced onion
  • 2 tsp garlic, minced
  • 2 cans beef broth
  • 1 can french onion soup
  • 1 1/2 c diced green cabbage
  • 1/2 c green beans (can substitute celery if you like)
  • 2 T tomato paste
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 c diced zucchini

Preparation

Step 1

In large saucepan, use 2 T olive oil to sautee carrots, onions and garlic...over low heat until softened.

Add broth, cabbage and all other ingredients. Bring to a boil. Lower heat and simmer, cover and simmer for 15 min. If you use zucchini, add 3-4 min longer before serving. Freezes and keeps well. If you decide to put a little left over roast beef in it...this tastes great too. Add a point or 2 for the meat for WW.
