Meatloaf with Carmalized Onion & Mushrooms

Ingredients

  • 2 tsp exra virgin olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 tsp sugar
  • 1/2 lb fresh mushrooms, sliced
  • 1 1/2 lbs ground beef 7% of less fat
  • 1 c tomato sauce
  • 1/2 c plain dried bread crumbs
  • 2 egg whites,lightly beaten
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/4 tsp pepper
  • ketchup, optional

Preparation

Step 1

Preheat oven to 350 degrees. Spray pan. Heat olive oil in pan, add onion, garlic, and sugar. Cook and stir often until golden brown. Put this mixture in a large bowl. Now cook mushrooms for 5-6 mushrooms and add to bowl with onions/garlic...cool 5 min.

Stir in browned beef, 1/2 c tomato sauce, bread crumbs, egg whites, basil, salt, and pepper...stir until well mixed.
Transfer mixture to baking sheet and form into a 4x9 inch loaf. Spread remaining 1/2 c. tomato sauce on top. Bake for 45-55 min or thermometer reads 160 degrees.
