CHILI

I’ve been making chili for many more years than I care to admit. I don’t think I have made it exactly the same way twice. Following is my basic version - variations and substitutions are included.

Ingredients

  • 1 Lb. ground beef
  • 1/2 Medium onion, chopped
  • 1 Lg. clove garlic
  • 2 Cans light red kidney beans
  • 1/2 Jalapeno, seeded and diced (add the whole thing if you like it hot)
  • 1 8 oz. can tomato sauce
  • 1 Cup petit cut or diced canned tomatoes
  • 1-1/2 Pkgs. Chili seasoning mix
  • 1/8 Tsp. oregano
  • 1/8 Cup chopped green pepper
  • 1 Stalk celery, chopped
  • Salt

Preparation

Step 1

Saute ground beef in 1 Tbs. butter, breaking up clumps. Add onion and garlic and cook until almost translucent. Remove from heat. Add all ingredients to crock pot, stir well and cook for a few hours. Taste and adjust seasoning. Ladle into bowls and top with shredded cheddar cheese.


Note:

If you do not have a jalapeno, use dried red pepper to add some heat.
You can substitute salsa for diced canned tomatoes
A can of Campbells Condensed tomato soup can be used instead of tomato sauce.
