CREPES

An alternative to homemade pasta, particularly cannelloni, are crepes. When we lived in Chicago, it was a real treat to go to The Magic Pan, a wonderful restaurant with phenomenal soups and a complete menu of entrée and dessert crepes. This is their recipe.

Ingredients
- 3/4 Cup all-purpose flour
- 1/4 Tsp. salt
- 3 eggs
- 1 Cup milk
Preparation
Step 1
Combine flour and salt; add eggs and milk and mix until smooth. Let sit for ½ hour.
I use an electric crepe pan, which is kind of like cheating, because you do not have to “flip”. You do have to make sure the crepe maker surface is well oiled or buttered between each crepe. Oil, dip, let cook, peel off onto wax paper. Repeat.
