Morning Glory Muffins

Ingredients

  • 1 1/4 cups coconut palm sugar (can substitute with packed brown sugar)
  • 3 eggs
  • 1/4 cup melted coconut oil (can substitute with canola oil)
  • 1/2 stick (1/4 cup) butter, melted
  • 1 teaspoon vanilla
  • 2 cups whole wheat pastry flour (or white whole wheat flour)
  • 2 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons cinnamon
  • 2 cups shredded carrots
  • 1/2 cup raisins
  • 1 cup chopped apples
  • Optional: turbinado sugar, for tops

Preparation

Instructions
Preheat oven to 350 degrees F.
Line muffin tin with paper liners or spray with cooking spray.
In a large bowl, whisk together sugar, eggs, oil, butter and vanilla.
In a separate bowl, sift together flour, baking soda, salt, and cinnamon.
Add wet ingredients to dry ingredients and stir just until combined. Do not overmix.
Fold in carrots, raisins, and apples.
Divide batter evenly among prepared muffin cups. Sprinkle with turbinado sugar.
Bake for 20 minutes, or until toothpick inserted in center comes out clean.
