APRICOT SQUARES

I found this bar cookie recipe in a Bon Appetit issue about 25 years ago and have been making it ever since. You can substitute any flavor jam in place of apricot if you wish.
Ingredients
- 1 Cup butter, softened
- 1 Cup sugar
- 1 Egg yolk
- 2 Cups all purpose flour
- 3/4 Cup finely chopped walnuts
- 1 10 ounce jar apricot jam
Preparation
Step 1
Oven to 350 degrees.
Cream butter with sugar in large bowl. Add egg yolk and mix well. Stir in flour, add walnuts and blend well (dough will be soft).
Divide dough in half. Spread half evenly into bottom of 9x13 baking dish. Spread with apricot jam.
Here is where I divert from the original recipe. Covering the jam with the second half of the dough used to be a pain according to the recipe. If you roll the balance of the dough between two sheets of wax paper to the size of the pan, peel off one side and carefully “plop” (official culinary term) on top of jam, it is much easier. Repair any damage done in the “plop” and pinch around edge slightly.
Bake until top is golden, about 40-45 minutes. Let cool slightly before cutting into squares.
