BAKED “MISSISSIPPI SALMON” (CATFISH)

Ingredients
- 6 Catfish fillets
- 1 Cup milk
- 2/3 Cup Freshly grated Parmesan or Romano cheese
- 1 1/4 Cup Flour
- 1/2 Tbs. Salt
- 1 Tsp. Italian seasoning
- 1 Tbs. Paprika
- 1 Tsp. Onion powder
- 1 Tsp. Black pepper
- 1/2 Tsp. Baking powder
- 1/4 Tsp. Garlic powder
- 1/2 Cup butter or margarine

Step 1
Marinate catfish overnight or for a few hours in milk. Remove each fillet and dredge in flour mixture that includes all dry ingredients. Place on greased cookie sheet. Drizzle with melted margarine or butter. Bake at 400 degrees for about 20 minutes, or until coating is crispy. Do not turn.
