Ingredients
- Layer 1:
- 2 (3 oz.) Pkgs. Lime Gelatin
- 2 Cups Boiling Water
- 2 Cups Cold Water
- 1 (20 oz.) Can Crushed Pineapple
- Layer 2:
- 2 Cups Whipped Topping
- 8 oz. Cream Cheese
- Layer 3:
- 2 Cups Pineapple Juice
- 3/4 Cup Sugar
- 1/4 Cup Flour
- 3 Egg Yolks

Step 1
To prepare layer 1 combine gelatin with hot and cold water. Pour into a large serving bowl or 9 x 13 inch pan. Refrigerate to set. Drain pineapple, reserving juice. Arrange pineapple over lime gelatin. To prepare layer 2 combine whipped topping and softened cream cheese and beat until smooth. Pour over pineapple and gelatin layers. To prepare layer 3 add enough water to reserved pineapple juice to make 2 cups. In a saucepan stir together pineapple juice, sugar, flour, and egg yolks and cook until thickened, stirring occasionally. Let cool. Pour topping over cream cheese layer and refrigerate to chill.
