LEMON SQUARES

This is one of the first “sweets” I learned to make that was not handed down to me from my Mom. One of my friends at Montgomery Ward made it for a party and I had to learn to make it.

Ingredients

  • Crust:
  • Oven to 350 degrees.
  • 1 1/2 sticks butter, softened
  • 1 1/2 cups flour
  • 1/2 cup powdered sugar
  • Topping:
  • 3 Eggs
  • 1 1/2 cups sugar
  • 3 Tbs. flour
  • 1/2 Cup lemon juice

Preparation

Step 1

Mix together to form dough. Spread out with fingers into a 9x13” ungreased pan. Bake 15-20 minutes until crust is golden.

Mix flour and sugar in bowl. Add eggs gradually and stir. Slowly add lemon juice. Mix thoroughly. Pour over crust and bake 16-20 minutes.

Let cool before cutting into squares. Sprinkle with powdered sugar
