Ingredients
- Dressing:
- 6 Medium Potatoes
- 2-3 Hard Boiled Eggs
- 1 Medium Onion, minced
- 2-3 Stalks Celery, chopped
- 1 Cup Sugar
- 1 Tbs. Cornstarch
- 1/2 tsp. Salt
- 1/8 tsp. Pepper
- 1/2 Cup Water
- 1/2 Cup Vinegar
- 2 Eggs, beaten
- 1 tsp. Yellow Prepared Mustard
- 1/2 Cup Salad Dressing

Preparation
Step 1
Cook potatoes and cube them. Toss together all salad ingredients; set aside. To prepare dressing: combine all dry ingredients in a saucepan. Gradually add water and vinegar to make a smooth paste, stirring constantly. Add eggs and cook until thickened, stirring constantly. Remove from heat and add mustard and salad dressing. Pour hot dressing over warm potato mixture and toss. Chill overnight and serve.
