Ingredients
- 1/2 Cup butter, softened
- 1 Pkg. yellow cake mix
- 1/2 Cup flaked coconut
- 2 1/2 cups sliced pared apples (I prefer Jonagold or Jonathan apples)
- 1/2 Cup sugar
- 1 Tsp. cinnamon
- 1 Cup sour cream (can use light)
- 1 egg

The first time I made this, nobody liked it except me. I thought it was fantastic. I didn’t make it for about a year and then apple season hit and I made it again. Anthony & Peter asked me if they had liked it previously. I lied. They both love it now. In fact it’s one of Anthony’s favorites.
Oven to 350 degrees.
Cut butter into dry cake mix until crumbly. Mix in coconut. Pat mixture lightly into ungreased 13x9x2” pan, building up slight edges. Bake 10 minutes.
Arrange apple slices on warm crust. Mix sugar and cinnamon; sprinkle on apples. Blend sour cream and egg yolks. Drizzle over apples (topping will not completely cover apples). Bake 25 minutes or until edges are light brown. DO NOT OVERBAKE
