Ingredients
- 6 English muffins, sliced
- 1 tbl butter, melted
- 6 eggs, beaten
- 1/4 cup water
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp onion powder
- 6 slices thick cut Canadian ham or sausage patties
- 6 slices cheddar cheese
Preparation
Step 1
Melt the butter in a microwave safe dish and brush liberally on the open face English muffins. Lay all pieces out on a large cooking sheet pan. Set aside
Whisk together eggs, water and seasonings and pour into either an 8x8 pan or a large muffin tin sprayed with non-stick spray.
If using an 8x8, tip the eggs out onto your cutting surface and use a drinking glass that's the same size as your English muffins, cut out 6 circles. If using the muffin pan, remove eggs (they will be big and poofy at first) and let them sit.
While your eggs are cooking, heat up the Canadian bacon in a skillet on the stove top. Cook for approximately 3-4 minutes each side, depending on how well done you like it. If you are going with the sausage, form 6 patties from your sausage meat and cook for 4-5 minutes each side until cooked though.. remove to a paper towel lined plate to drain away excess grease
To Reheat: Unwrap the frozen sandwich and microwave on a paper towel for 1-2 minutes. You can also do what I do and remove the English muffin and pop it in the toaster.
