Grandma's Finnish Salmon Chowder

Straight from my grandma who visited Finland several years ago with my grandpa- "We were served this soup in Finland, around a big open fire outdoors, after we had finished white water rafting in an icy cold river, and we were very cold and wet. Tasted yummy!"
She served this a few Christmases ago, and I loved it! Can't wait to try it again.

Ingredients

  • ~ 1 Tbsp butter
  • ~ 3 cups chopped onions
  • ~ 1/2 tsp celery salt
  • ~ 1/4 cup your choice GF flour
  • ~ 8 oz clam juice
  • ~ 4 cups cubed, peeled baking potatoes
  • ~ 1.5 cups thinly sliced carrots
  • ~ 3.5 cups 1% milk (use whole milk, cream, or mixture of milks/cream for thicker soup)
  • ~ 10 oz roasted salmon
  • ~ 2 Tbsp chopped fresh dill
  • ~ 1/4. tsp Worcestershire sauce (look for GF kind)

Preparation

Step 1

1. Melt butter in heavy pan over med heat. Add onion, sauté 5 min.
2. Sprinkle onion mixture with celery salt.
3. Stir in flour, cook for 1 min, stirring constantly.
4. Gradually add clam juice. Bring mixture to a boil, cook for 1 min or until thick, stirring constantly.
5. Add potato cubes and carrot slices, and stir in milk.
6. Bring to a boil; reduce heat; simmer for 10 min.
7. Break salmon into chunks; add salmon, dill, and Wor. sauce to pan.
8. Bring chowder to a boil; reduce heat, and simmer for 10 min or until potato is tender.

Serve with a hearty, crunchy slice of bread (GF or not), and perhaps some kind of spicy, arugula salad.
