Corn Tortilla Chicken Lasagna

Makes 2 casseroles that serve 10-12.

Ingredients

  • 36 corn tortillas (6 inch)
  • 6 c chicken breast,cooked and cubed
  • 2 cans (one 28 oz and one 16 oz) kidney beans, rinsed and drained
  • 3 jars (18oz) salsa
  • 3 c (24oz) sour cream
  • 3 green peppers. large and chopped
  • 3 cans (3.8oz) black olives, sliced and drained
  • 3 c (12oz) monterey jack cheese, shredded
  • 2 c (12oz) cheddar cheese, shredded

Preparation

Step 1

In 2 9x12 baking dishes arrange 6 tortillas. Top w/ 1 c chicken. 2/3 kidney beans, 1 c salsa,1/2 c sour cream, 1/2 c green peppers, about 1/3 c olives. 1/2 c of cheeses. Repeat layers twice. Cover and bake at 350* for 25 minutes. Uncover and bake 10-15 minutes longer or until cheese is melted. Let stand for 10 minutes before serving.
