Chicken Satay

Ingredients

  • 2 T. creamy peanut butter
  • 1/2 cup soy sauce
  • 1/2 cup lemon or lime juice
  • 1 T. brown sugar
  • 2 T. curry powder
  • 2 cloves garlic, chopped
  • 1 teas. hot pepper sauce
  • 6 boneless chicken breasts

Preparation

Step 1

In a mixing bowl combine all the ingredients, except the chicken. Cut the chicken breasts into strips and add to the marinade. Refrigerate at least 2 hours, overnight is better. Grill 5 minutes per side. Can double the marinade and boil the extra to use as a sauce. Serve over rice.
