Ingredients
- Pam
- 6 oz smoked sausage or kielbasa
- 1 c onion, chopped
- 3/4 c green pepper, chopped
- 1 clove garlic
- 3 (16oz) cans red beans, drained
- 1 (14 1/2 oz) can diced tomatoes, undrained
- 1 1/2 c water
- 1 (6oz) can tomato paste
- 1/4 tsp dried thyme
- 1/4 tsp hot sauce
- 1 bay leaf
- 4 c long grain rice, cooked, no salt
Preparation
Step 1
Coat large pot w/ pam. Add sausage and next 3 ingredients; saute until tender.
Add beans and next 7 ingredients; ring to a boil and simmer 20 minutes. Remove and discard bay leaf. Serve over rice.
