Red Beans and Rice

Ingredients

  • Pam
  • 6 oz smoked sausage or kielbasa
  • 1 c onion, chopped
  • 3/4 c green pepper, chopped
  • 1 clove garlic
  • 3 (16oz) cans red beans, drained
  • 1 (14 1/2 oz) can diced tomatoes, undrained
  • 1 1/2 c water
  • 1 (6oz) can tomato paste
  • 1/4 tsp dried thyme
  • 1/4 tsp hot sauce
  • 1 bay leaf
  • 4 c long grain rice, cooked, no salt

Preparation

Step 1

Coat large pot w/ pam. Add sausage and next 3 ingredients; saute until tender.
Add beans and next 7 ingredients; ring to a boil and simmer 20 minutes. Remove and discard bay leaf. Serve over rice.
