Meatloaf & Potatoes - Instant Pot

I use a Secura 6-qt Electric Pressure Cooker Steam Rack Basket Set that I got from Amazon. I put the potatoes in the bottom, put the meatloaf in the pan (has holes in bottom), put the rack on top of the pan, and the pouch with carrots, etc. on the top.

Ingredients

  • MEAT LOAF:
  • 6 potatoes, peeled and cut into large chunks
  • 1 1/2 cups liquid, like chicken broth
  • 1 pound ground beef (90/10)
  • 1 package onion soup mix
  • 1 egg, beaten
  • 1/2 cup oats, old fashioned or instant
  • 1/2 can tomato soup or 1/2 small can of tomato sauce
  • 1 tablespoon Worcestershire sauce
  • Baby carrots
  • Chunks of onion
  • Bell pepper
  • TOPPING:
  • 1/2 cup catsup
  • Remainder of tomato sauce
  • 2 tablespoons brown sugar

Preparation

Step 1

Place potatoes in the bottom of the pot and pour in the liquid.

Mix meatloaf ingredients together and form into Secura pan; about 1 1/2 inches thick.

Mix catsup and brown sugar together and spread on meatloaf.

Put the meatloaf in the pot on top of the potatoes

Put carrots, onion, peppers, a little butter, brown sugar, salt, pepper in a foil pouch; punch a few holes for steam to escape. Put rack on top of meatloaf; put the pouch on the rack.

Plug in Instant Pot and set to manual high pressure for 25 minutes.

Ten-minute natural release.

You can drain and mash the potatoes with a little butter, cream, salt and pepper. I just serve potatoes and carrots with the meatloaf as they come out of the pot.

After all veggies are removed from pot, you can mix together 1 tablespoon of cornstarch with 2 tablespoons cold water, mix together with broth in pot, and sauté until thick. Makes a nice gravy!
