Ingredients
- 1 16-18 oz. t-bone stead, cut 1/2 inch thick
- 1 Tbsp. olive oil
- 1/4 cup shopped shallots
- 1/4 cup Merlot
- 1/4 cup plus 2 Tbsp. beef broth
- 2 Tbsp. butter, softened
- 1 cup thinly sliced baby bella mushrooms
- 1 clove garlic, minced
- 1 Tbsp. chopped fresh thyme
- 1/4 cup crumbled blue cheese

Step 1
Trim frat from steak. Season both sides. Grill as desired.
In a medium skillet heat olive oil over medium heat. Add shallots and cook until soft. Add Merlot; continue cooking until reduced to syrup-like consistency. Add broth and cook until bubbly. Stir in butter until melted. Gently toss in mushrooms and garlic; cook until mushrooms are slightly tender. Sprinkle with thyme.
Let grilled steak rest for 5 minutes. Top with blue cheese crumbles and serve with mushroom sauce.
