Ingredients
- 2 pounds Russet potatoes (about 6 medium potatoes)
- 1/4 cup olive oil
- 2 tbsp unsalted butter, melted
- 1 1/2 tsp salt
- 1 tsp pepper
- 1 1/2 tbsp garlic, minced
- 2 tsp parsley
- 1 tbsp butter
- 1 tsp garlic, minced
- 1/2 tbsp all-purpose flour
- 1/3 cup half and half
- 1 tsp parsley
- 1/2 tsp garlic salt
- salt and pepper, to taste

Instructions Potatoes:
Pre-heat oven to 400 degrees. Line a baking sheet with aluminum foil.
Cut the potatoes into halves or quarters.
Place the potatoes in a large bowl and drizzle with olive oil, butter, salt, pepper, garlic salt, and minced garlic. Toss until all the potatoes are coated.
Transfer the potatoes to the baking sheet and spread out into an even layer.
Bake the potatoes for about 35-45 minutes, until they are browned and crisp on the outside. Halfway through cooking, toss the potatoes to make sure they brown on all sides. Sauce:
In a small saucepan, over low heat, melt the butter. Add in garlic and sauté for about 30 seconds or until the garlic is tender.
Stir in the flour and mix until it is incorporated.
Increase heat to medium, slowly whisk in the half and half.
Stir in the parsley, garlic salt, salt and pepper. Mix.
Pour the sauce into a dipping bowl or drizzle the sauce over the potatoes right before serving. Enjoy!!
