Chicken Cordon Bleu

Ingredients

  • 4 boneless skinless chicken breasts
  • salt
  • pepper
  • 8 slices ham
  • 16 slices swiss/gruyere cheese
  • 2 tsp thyme leaves
  • 1/4 c flour
  • 1 c panko or regular bread crumbs
  • EVOO
  • 2 eggs
  • 2 tsp water

Preparation

Step 1

Pound chicken until 1/4 inch thick. Lay 2 slices of cheese on each breast followed by 2 slice of ham and then 2 more slices of cheese. Tuck the sides of the breast and roll up tight like a jelly roll and secure with toothpick.

Season flour with salt, pepper and thyme in a shallow dish. Beat eggs and water together in another shallow dish. Lightly dust chicken in flour, then eggwash. Mix EVOO and breadcrumbs together and then coat chicken and transfer to baking dish. Bake @ 350 for 20-30 minutes.
