Ultimate Stuffed Potatoes

More trouble than simply throwing potatoes in the oven to bake, but for special occasions, these are well worth the effort.

Ingredients
- Sauce:
- 4 mediun Idaho potatoes
- extra virgin olive oil
- coarse salt
- 4 T butter
- 1/4 C flour
- 1/2 C milk
- 2 C sharp white Cheddar, grated
- broccoli, chopped into bite-sized pieces and steamed
- 6 strips bacon, cooked and diced
- fresh ground pepper

Preparation
Step 1
Coat potatoes with oil and salt and bake at 400 degrees for 1 hour.
Melt butter with flour over medium heat and cook 2 minutes, stirring constantly. Slowly whisk in milk, add cheese and stir until cheese is completely melted. Remove from heat, add broccoli, bacon and pepper and stir to distribute evenly.
Cut a slit in each potato and push the ends together to open a hole in the potato. Fill each potato with 1/4th of the mixture, return to oven and bake until bubbly.
Great served with Roasted Tenderloin.
