  • Tofu mayonnaise

  • Chopped scallions

This is the simplest possible accompaniment for Wolfgang's hearty soups. Make sure you scrub the baking potatoes first. Rub them with a little olive oil and salt. The secret to great baked potatoes lies in cooking them on a wire rack and never on a solid surface like a baking tray. Bake them for 50 to 60 minutes at 400 degrees. You know they're cooked when the flesh 'gives' when you press them.

Now's when the fun starts. Cut them in two or split them across the top. Add a little butter, cheese, yoghurt, cottage cheese, cream cheese, fromage frais, tofu mayonnaise, or chili mayonaisse. Add scallions, bacon, anything that takes your fancy. If necessary place the potato with the topping under the grill for a couple of minutes to melt the sauce into the potato. And don't forget the salt and pepper.
